Apple & Pear Omelette with Blue Cheese and Thyme

An omelette with sweet fruits mixed with the strong taste of blue cheese and thyme is an interesting choice, and it will definitely surprise your taste buds.

- 3 Eggs
- 2 Flour
- Pinch Of Salt
- 2 Milk
- 2 Blue Cheese (Crumbled)
- 1 Coconut Oil
- 1 Apple
- 1 Pear
- 1 Rice Syrup
- 1 Thyme
Heat your oven to 175 degrees C/350 degrees F.
Cut apple and pear into slices. Heat a frying pan over medium heat with a teaspoon of coconut oil. Add apple, pear, rice syrup and thyme.
Fry until fruits start to soften. Drain and put to side.
Separate egg whites from yolks. Whip whites until foamy, then using a wooden spoon mix in flour, salt, yolks, milk and cheese.
Place a cast iron pan with olive oil in your oven just until warms. Spread oil around the pan. Pour the egg mix into it and place fruits on top (It may fall into the foam).
Bake for about 15-20 minutes.
