Raw Beet Noodle Salad with Kale, Herbs & Goat Cheese

With summer around the corner, the season of BBQs and picnics is upon us. Since guests tend to trickle in at different times for these types of get-togethers, it’s helpful to plan a menu with recipes that can withstand time, like this hearty salad of raw beet noodles and kale. This recipe holds its texture nicely and is actually even better after sitting a few hours—and fine overnight too.

This recipe serves eight as a side, but could easily and very quickly be scaled up to feed a larger crowd thanks to the new KitchenAid® Artisan® Mini Stand Mixer. It might be mini in size, but it’s just as powerful as the KitchenAid® Artisan® Series 5-Quart Tilt-Head Stand Mixer! Since all of the attachments fit the Mini too, I used the KitchenAid® 5 Blade Spiralizer with Peel, Core and Slice attachment to make the raw beet noodles. By using the peeling blade along with the fine spiralizing blade, the beets get spiralized and peeled all in one step. Easy peasy!

If you’ve never had raw beets before, I think you’ll be pleasantly surprised. They are sweet, earthy and the spiralized noodles look like confetti! I used a combination of two golden beets and two red beets for a pretty contrast in color.


Ingredients

  • For The Dressing

  • 1/4 cups Red Wine Vinegar
  • 2 tsp Dijon Mustard
  • 1/2 cups Olive Oil
  • 1 tsp Honey
  • Salt and Pepper To Taste

  • For The Salad
  • –––––––––––––––––––
  • 3-4 Large Beets ( a mix of red, golden or chioggia)
  • 1 Bunch of Kale, Coarsely Chopped
  • 1 cups Cherry Tomatoes, Halved
  • 1/2 cups Goat Cheese, Crumbled
  • 1/2 cups Pistachio Kernels, Toasted
  • 1/4 cups Dill, Chopped
  • 1/4 cups Basil, Chopped
 

Directions

  1. To make the dressing, whisk together all of the dressing ingredients in a small bowl. Season with salt and pepper.

  2. For the beet noodles, attach the KitchenAid® 5 Blade Spiralizer with Peel, Core and Slice into the power hub of your Artisan® Mini Stand Mixer. Attach the fruit and vegetable skewer piece and insert the peeling and fine spiralizing blade. Secure the beet onto the blade core and turn on your KitchenAid® Artisan® Mini Stand Mixer to speed 1-2. Repeat with remaining beets.

  3. To assemble the salad, dress the kale and beet noodles. Add half of the cherry tomatoes, goat cheese, pistachios, and herbs and toss. Garnish with the remaining cherry tomatoes, goat cheese, pistachios and herbs.
